Single Vineyard Series
2016 Hart & Hunter Ablington Shiraz
Vintage 16’ has surprised many of us and turned out luscious, perfumed reds, that have stood firmly in weight, colour and flavour, whilst the whites are elegant
with good natural acidity and flavour. After a much drier than normal spring in 2015, we saw significant rain events through November, December and January. We picked our first parcel of white on the 19th January, with all the reds in by the 23rd
February, so a very fast and furious vintage.
Provenance & Vinification
The Ablington Vineyard has shown us how it can withstand a variety of conditions to produce amazing quality fruit, and 2016 was no exception. A north-east facing vineyard
with rich free draining soils, has produced a wine of true Hunter style, with the hallmark characteristics of this vineyard and soil. The light/medium clay soils tends to stay cooler and retain water better, giving us sumptuous fruit, with underlying structure and weight.
The fruit was partly handpicked and partly machine harvested on the 7th of February, we crushed and de-stemmed leaving it to cold soak for 3 days for maximum colour extraction. At
completion of ferment, the wine was racked into a mix of new French and 1 year old oak barrels for approximately 9 months.
The 2016 Ablington is fine and elegant with lovely spicy and savoury characters.
Vibrant and dark red in colour, with the nose opening up to aniseed, violets,
cherries, and a hint of moccha. Crushed fennel seed gives an enriched savouriness to the nose.
The palate is intense, has lovely barrel characters along with red fruits, spicy black pepper, silky tannins and lovely fresh acidity lingering on the palate..
We are enjoying the Ablington with Lamb pies and mash.
A great wine drinking now, but should see 7-10 years with careful cellaring.
