Bacon and Egg Roll

Every weekend a friend of ours mixes up his breaky and pairs it with something scrummy – our 2023 The Remparts Semillon.
This pairing adds a little bit of Zest to this classic breakfast favourite. 🙂
Ingredients
- 4 Free Range Eggs
- 8 rashers short cut bacon
- 4 brioche buns, halved, toasted
- Whatever sauce you love with your Bacon & Egg Roll
Directions
- Heat a large, non-stick frying pan over medium heat. Spray with oil spray. Crack 2 eggs into the pan. Cook for 3 mins for soft yolks or until cooked to your liking. Transfer to a warm plate. Repeat with the remaining eggs.
- Increase heat to high. Add the bacon and cook for 1-2 mins each side or until golden brown.
- Spread the bun halves evenly with the aioli or whatever sauce you like. Place the bun bases on a clean work surface. Top with bacon, egg, and bun tops. Serve immediately.
